Trying New Foods


Two years ago, when Noah began the Diet, I remember feeling "freaked out" that he wouldn't be getting his fruits and veges..... a balanced diet..... Finally, our Dietitian said, "Cathy, 90% of his diet is Fat! No matter what little things you throw in there to make yourself feel like it looks more healthy or a little more balanced, his meals will still be 90% fat!" I realized at that moment how important it was for Noah to enjoy his meals. I didn't get hung up on trying "new" foods.

With my other children, I do not design meals according to their tastes. We eat the meal that I fix. In fact, my rule is - Try everything at least once. If I fix a vege you aren't fond of, guess what..... I've got another vege on the table. But if you don't eat all of your dinner, you can't get into the refrigerator the rest of the evening (except for water).

Am I harsh? No ..... I'm just not a short order cook. I proudly took on their food battles when they were younger and it has made our lives much more enjoyable. They try new foods willingly and eat fabulously when we are dining out or at other people's homes. I love it!

Anyway........ for Noah and the Keto Diet, it was all about eating the meal and eating it all! So, I've spent the past 2 years talking with Noah to find out what food he wants. I do my best to put meals together that he enjoys. In fact, this picture shows Noah with his favorite meal. "Noah Ice Cream." It's Heavy Whipping Cream (whipped), mixed with a small amount of melted Coconut Oil, some peanut butter, chopped pecans, Bickford Chocolate Flavoring and a titch of Splenda. Freeze it and serve in a cute bowl or sundae glass. He loves it. It actually smells like a Peanut Butter and Chocolate Pecan Ice Cream.

Recently..........I decided to try some veges and mayo with him. Normally, he cannot stand mayo. It's just not part of his diet (not fighting the battle with the Keto kid!). I sprinkled a titch of powdered ranch dressing to some mayo, sliced some carrots and celery and added some cheese slices to the plate. To my surprise...he LOVED it! He was so proud of himself for trying something new too!

My husband turned 40 last month. We went out to sushi that night to celebrate. My two older boys hadn't had sushi. I'm only a California Roll type wimpy sushi person and over the years I haven't been the best "sushi buddy" for my hubby that loves loves loves sushi! The two older boys loved it! Noah watched the entire meal, our reactions to the boys trying something new, and he loved the colors in the foods that we ate. A few days later, I asked Noah if he wanted to try some sushi. He was ecstatic! I sauteed a few shrimp, added some small globs of cream cheese to each, a few sliced carrots on the plate for color and butter candies on the side. (A butter candy is melted butter mixed with coconut oil & cinnamon. Poured into a small tinfoil wrapper and frozen. I pop them on his plate. He peels the foil off and eats his "butter candy.") He loved the "Noah Sushi" meal. It made him feel confident and adventurous.

I wouldn't worry about variety or balancing the meal or forcing new foods. But every once in a while, try to capitalize on the excitement of an experience to create something new and fun for your keto kid. I was surprised by his positive response. Hopefully you will be too!

**Maybe if I could convince him to eat a meal that Batman or Spiderman ate on a regular basis, he would eat that too;> Hee Hee Hee

Simple Snacks


Pepperoni & Cream Cheese Sandwiches
  • Pepperoni (approx. 2 grams per slice of Hormel Pepperoni)
  • Cream Cheese (slice and put between two slices of pepperoni)
  • Cream
  • Raspberries
Simple School Lunch without Nuts
  • Heavy Whipping Cream (watered down to drink)
  • Precious String Cheese
  • Strawberries
Simple School Lunch without Nuts II
  • Heavy Whipping Cream (watered down to drink)
  • Cheddar Cheese
  • Apple
Quick Meal
  • Heavy Whipping Cream (watered down to drink)
  • Peanuts
  • Butter & Oil melted with a dash of cinnamon
Nuts & Dessert
  • Melted butter
  • Chopped Pecans
  • Heavy Whipping Cream (whipped)
  • Strawberries
  • A titch of Stevia
Veges Meal
  • Celery Sticks
  • Carrot Sticks
  • Mayo with a tiny pinch of Ranch Dressing Powder
  • Heavy Whipping Cream (watered down to drink)
Breakfast
  • Heavy Whipping Cream (watered down)
  • Fiber One (not much in volume but "hey it's cereal")
  • Bacon
  • Melted Butter/Oil with Cinnamon
Yummy Yogurt
  • Fage Yogurt (full fat)
  • Oil (mixed in)
  • Heavy Whipping Cream (mixed in)
  • a Few drops of Pure Vanilla (Bickford's without Sugar)
  • a sprinkle of Stevia
On The Road w/out Cream or Ice Pack
  • Peanut Butter
  • Oil
  • Blueberries

** Berries are great for volume. I prepare recipes with blueberries & print it. Then recalculate the same meal but with strawberries. Redo with raspberries, etc. Kids love the variety. I think the prettiest meal is the Vege meal. Tuesdays and Wednesdays are the busiest for us. I'm driving kids to and from piano lessons, baseball, Cub Scouts, Boy Scouts and an easy throw together meal for the car is always the Peanut Butter/Oil/Berry combo.
** I often throw in a very small pinch of Unsweetened Chocolate and some Bickford Flavorings Chocolate to make "Chocolate Milk." Sometimes I heat it a little for "hot chocolate" as well.
**DIET BEGINNERS: Keep meals simple and "clean." By "clean" I mean without sugar substitutes for a while. Avoid the aspartame or other sugar substitutes. That way, if your child has a breakthrough seizure, you won't be searching through food sensitivities. We've had some breakthroughs occasionally and I've wondered if it was from maltodextrin. Some children are THAT sensitive. We keep it all "clean" now. One less thing to deal with and worry about.

SSSHHH!


Imagine that you're hearing me in my best whisper
.....we're 18 1/2 weeks seizure free! That's seizure free through strep throat, 3 weeks of a nasty cold including 2 weeks of heavy coughing and an ear infection..... I'm whispering because in some weird way, I don't want to jinx this. If I say it out loud or yell it to the sky, which is exactly what I want to do, then what might happen??? Whatever comes tonight, tomorrow and the next day.......... it's been a great ride! It's nice not to look out of the corner of my eye each moment. It's wonderful to allow Noah to walk into another room without following. It's amazing to sleep deeply and not be in the sleeping stage where I'm listening to his every breath. I know you all relate. I'm praying for continued success for Noah and for all of your children too!

Multistix

Like every Keto family, we consistently test Noah's Ketones with a urine test. We use Multistix, which allows us to read both Ketones and Specific Gravity. Usually, I purchase the Multistix through the pharmacy at Children's Hospital but our insurance didn't cover them. The cost totalled $90 per bottle. Each bottle contains 100 sticks and we test Ketones twice a day. To save money, our dietitian suggested cutting the strips in half lengthwise. Reading the sticks takes some practice but once we got the hang of it, cutting the sticks in half and reading them became no problem.

Most recently though, I thought I would try to save some money and purchase the Multistix off of the Internet. I bought a bottle for $15 with $5 shipping. The strips are similar to the ones I normally purchase but the label on the back has slightly different colors for Specific Gravity. In fact the colors on the label to not correlate to the colors on the stick. The stick color changes are accurate with the normal Multistix bottle labels from the Children's Hospital pharmacy. Weird! 

I'm still on the search to save money on Multistix so if anyone has any ideas that would be great! I'll post when I figure this one out. I'm sure I can find some good Multistix for less than $90 a bottle. For now, try cutting them in half. It's a money saver!

Grumbling Over Grease Stains

Lately I've been grumbling over the grease stains. Grease stains are not only prevalent on my Keto Kid's clothing but on my clothes too. It's all the prep work that causes grease on my clothes. Uuugghh!

I asked the Yahoo Keto Moms and Dads how they handle the grease stains or if they just keep tossing clothes in the garbage. Here are the ideas they gave me:
  • Dawn or other grease fighting dishsoap. Place a small amount on the grease stain, rub and toss into the washer.
  • Ammonia (not sure how this one works) Please remember that ammonia combined with bleach products can be a deadly combo. Don't combine the two!
  • Spray-N-Wash Gel mixed with Resolve.
  • Tide paste (water & tide) rubbed into stain. Put clothing article in plastic bag overnight and wash with regular laundry.

Halloween

HAPPY HALLOWEEN(a bit late)

Sorry to put my *Halloween Hints* up a little late. Actually, I would love to hear everyone's Keto Kid Halloween experiences. So please leave a comment if you feel comfortable doing so.

Noah loves Trick or Treating with his big brothers! I have to admit, I felt a little sad when the boys came home afterwards, dumped their bags out & Noah had received 2 small toys in his entire boat-load of candy. Luckily, I had tons of plastic frogs & bubbles left over to add to his cheap toy pile. He loved it. Once the boys sift through their candy, Noah gives all of his to Daddy, Daddy gives him $20 & we take him to Toys R Us to buy the toy of his choice.

He loves this method! Hope to hear some of yours!

Scales


The scale you choose is important! We received our scale from our Keto Dietitian during our hospital admittance to begin the diet. The most important thing is to make sure your scale measures to the tenth of a gram. As the battery gets low, the weight will gradually change without a change in the item you are weighing. Be sure to purchase a model that has both battery & plug-in possibilities. Good scales are important to exactness in the diet! Good luck & good weighing.
